ABC of Me.(a survey)

I haven't done one of these since forever, so I thought why not? Found it at Tahini Too.


A is for age: I am 22 but my birthday is days away :)
B is for breakfast today: Cooked oat groats and brown rice heated up with some soy milk, raw almonds, banana, chia seeds and molasses.
C is for currently craving: Something chewy and gluteny. Like a huge bowl of pasta. Or a loaf of bread. (more on this later).
D is for dinner tonight: The quinoa puttanesca from Appetite for Reduction. I added some beans and a zucchini and used 1x400g can of tomatoes plus 4 large fresh ones (instead of 1x800g can). I also didn't use wine.
It's a terrible photo but it's the most delicious thing I've had for a wile. I love capers.

E is for favorite type of exercise: I'm getting into running at the moment. Though we had a larger weekend than normal and the motivation has fallen a little..
F is for an irrational fear: I have recurring nightmares about being trapped in a hospital when a ginormous tornado is coming. I'd MUCH rather a cyclone or hurricane. Or flood or earthquake. Did you know Arkansas was pronounced Are-can-saw? Learn something new everyday.
G is for gross food: Soggy sandwiches. Disgusting.
H is for hometown: Tauranga, NZ.
I is for something important: A positive attitude.
J is for current favorite jam: Homemade marmalade:
K is for kids: My cats are my kids. I get stressed out when others' children are being irritating (which is pretty much always) imagine if they were mine!
L is for current location: My loungeroom.
M is for the most recent way you spent money:
Shopping for various gluten free flours ^
And fruit and veg. Sweet potatoes were still only 49c/kg!

N is for something you need: I don't really need anything. I do need to go for a run though.
O is for occupation: I am in between jobs - just resigned as a nursery hand and have a job to start next week as an office gopher/phone answerer/and data entry-er.
P is for pet peeve: I have so many it's hard to list them all. People eating with their mouth hanging open is a big one. Charlee's licking. People who talk loudly on mobiles on public transport. The neighbours who stare at me when I whipper snip. Plus many more.
Q is for a quote: Yesterday you said tomorrow.
R is for random fact about you: My big toes on both feet do not have joints. It creeps people out. Hahaha.
S is for favorite healthy snack: Hummus =D I make it every week.
T is for favorite treat: Home made biscuits or bread or ice cream.
U is for something that makes you unique: I have a scar on the top of my head that Nadine found when she shaved it. I don't know how I got it.
V is for favorite vegetable: Pretty sure I like them all. I go through phases.
W is for today’s workout: I'll get off my ass and go for a run in a minute, and then do some weights (since I'll no longer be lifting heavy things all day at work I'll have to keep on that!)
X is for X-rays you’ve had: Teeth/mouth and I've had an echo-cardiogram. That one was fun :)
Y is for yesterday’s highlight: My lunch:
Homemade gluten free wrap bread with lettuce, grated carrot and home grown sprouts on it with a vegie burger patty. My other ones had the baked falafel from Appetite for Reduction on it. Yum.

Random eats :)

The pecan crusted french toast from Skinny Bitch in the Kitch. Delicious. Don't think I'll bother with the whole sticking the chopped nuts to the bread next time - too fiddly and they burnt before the bread cooked properly - but wow. I've never had french toast before this and we both reckon it may turn into a weekend breakfast staple. I'd reccomend going for two pieces of bread for each person (if using heavy wholegrain bread like I did) because we couldn't quite finish it.
Barley and Cashew nut casserole from Easy Vegan Cooking. The only thing I don't like about this book is the apparent lack of flavour - so I just add some to the recipes when I make them. This one I cooked the barley with some beef style stock and a bay leaf, and added garlic. This is one that's better the next day (though still quite delicious the first day!) Meals like this are so easy to make and eat and are also filling and healthy. Good good.
A lunch the other weekend. Went perfectly with a bit of light reading and whipper snippering (lol.)
Fresh rice paper rolls with cos lettuce, grated carrot and some mashed chickpeas mixed with vegan mayo. Dipping sauce was sweet chilli and soy sauce. Sounds a little odd but totally worked :)

Lunch: Quinoa Salad and Black Bean Dip

I love quinoa in a salad. And I almost can't wait to go to work tomorrow so I can eat this one!

I found this reicipe: Green Goddess Salad (from Healthy. Happy. Life.) on Pinterest and thought it'd be a perfect portable, filling but light lunch to take to work.

My greens were peas, brocolli and english spinach shredded. I also chucked in a tomato I found in the fridge. I used quinoa instead of cous cous because it's what I had in the cupboard. Next weeks lunches might have to feature whole wheat cous cous! I used a chopped ruby red grapefruit instead of orange (really good idea! I love grapefruit.) The dressing I chose was the tahini option (see recipe) but I skipped the maple syrup because I don't have any at the moment.

Nadine and I shared a small bowl of this when she got home today as an afternoon snack. AKndnnewkjt34$%@.

I'm really liking this whole taking cold salads to work for lunch instead of leftovers thing. I don't have to wait for microwaves, it's always tasty, and it changes up the routine a bit. I also get to try many more dishes too! And all of the salads I've made so far can be made ahead, therefore I can do like 3 days of lunches for us at once and all I have to do is get the container out of the fridge in the morning, no fart arsing around.
I also usually make some sort of bean based dip to take for morning teas to eat with carrot/celery/other vegetable sticks. This week I've made Monumental Black Bean Dip from Eating Bird Food.
I usually make a simple hummus but this week I felt like a change. When I made this I added a half cup of extra black beans because I found it a bit thin. Also straight after making it the flavours were pretty mild, but Nadine took it to work today and said it was really good :) So the flavours must soak in a bit more overnight.
Attractive, isn't it? Hehehe.

Busy busy

So tonight is the last night we'll have to spend in our flat. This whole moving process seems to be taking forever! Probabaly because my little corolla is just that - little, and not all that much stuff fits inside it. Or maybe it's because not everything is in boxes, for example, today I'll be piling all our dresses into the backseat and hanging them up as soon as I get to the new house. Our coffee table books I put in the boot without a box because they make a box way too heavy, and I carried them in in smaller piles. And, it was a sweltering hot day yesterday and I thought I was going to collapse. Then I remembered the south's heat wave and realised it wasn't actually that hot, I'm just a wuss.
Regardless of my wussiness, I am so so glad I took this week as a holiday, rather than going to work and trying to move our copious amounts of crap at the same time. We need to do a big Lifeline run I think. I also need to not ever buy anything ever again. Except the thing is, most of the crap I've found that is mine I've been moving around since highschool.

So somewhere in amongst the cramped calves from running up and down stairs, to the blood blister on my finger from dropping a box of vintage crockery on it, and the brusies on my hips from whacking myself on our cast iron bed frame - I have to eat lunch. And in the interest of getting rid of as much perishable stuff in the freezer/fridge as is possible before I dig out our esky to clean which is currently under the stairs getting pooed on by geckos, I opened the freezer and pulled out the most empty packets I could find: edamame and those weird vegan prawn substitutes.
This was pretty tasty, actually, and really not that great for you. But who cares, I'm moving house.

Vegan prawn and edamame pasta
Serves 1

Ingredients:

100g spaghetti or other pasta shape that is hiding in your pantry
Margarine for frying
1 clove garlic, chopped
1/2 tsp dried chilli flakes
1 tsp dried dill
5 vegan prawns, chopped up
handful of frozen edamame, defrosted and shelled
black pepper
olive oil

Put pasta on to boil. When it's nearly done, melt the margarine in a small saucepan and fry the garlic and herbs for a minute. Add edamame and prawn pieces. Cook until prawn pieces are done, not long. When pasta is ready, drain, and stir through the prawn mixture. Drizzle olive oil over top and season with as much black pepper as you like.

Nadine asked yesterday if I was even a little nostalgic about leaving the flat. We have been here for two years after all. I said no. Though I will miss the colour of the kitchen cupboards:

Eat me a rainbow

So I signed up for the Bridge to Brisbane 5km as a jogger! Ha! Started training again today, I managed 5km in 45 minutes, running for one minute then walking for two for most of the way. I'm loosely following the Couch-to-5k training program: here is the metric (for us Aussies!) version. I am condensing it a little bit to be ready by Sep 11 :)

Anyway after my sweaty run/walk, I did some awesome stretches and ate the rest of my brie cheeze on wholegrain rice crackers:
To tide me over while I made lunch:
Rice paper rolls filled with a farmer's market haul! Shredded kale, silverbeet, carrot and beetroot with thinly sliced kohl rabi, celery and tomato, with some chopped raw macadamias. I ate them with hummus. And it was damn tasty. obviously had a mandarin on the side - my supervisor at work has a tree and these are the third twenty billion kilo bag she's given me for free! So yummy. And they last for aggges.

Date day!

Today Nadine and I had the day off together (yay!) so we decided to have a date day rather than just sit around watching telly which is what we usually end up doing.
First there was breakfast. I made buckwheat pancakes again, but we had no maple syrup so we squeezed a lemon over the top and melted a little bit of margarine on them. Delicious. I also used straight buckwheat flour, not half and half. Didn't make a difference at all, I thought they might be a little dry but nope. Perfect. I topped them with some fried sliced banana.

I got to choose the restaurant, so I picked Ginga Japanese restaurant because we haven't been there for ages. We started off with a cocktail - sake, gin, ginger ale, lemon and pickled ginger slices. Mmm. The sugar in it kind of gave us a headache though, haha. That's the problem with giving things up! 
Nadine ordered the bento. Clockwise from left: PLain rice with black sesame, vege tempura (eggplant, sweet potato, carrot, zucchini and capsicum) steamed vege and tofu, inari zushi and an egg sushi, Ignore that we didn't eat it haha.
We of course has edamame on the side. Can't go to a Japanese restaurant without edamame!
I had this massive bowl of veges in broth with some bean thread noodles, rice, miso soup and pickled things. Yuuuum.
The glands in my throat have been acting up over the last few days (tmi? Ha) so I ended the lovely day with a green juice :) Silver beet, carrot, orange, ginger. Hopefully it all goes away because I can't afford any days off work!

While we were in the city we walked past a little cafe that said they had vegan sweet options on a sign outside so after lunch we went and had a delicious piece of (sugary!) cake. It was chocolate with mint icing. And we found beetroot in it. It was pretty good. I forgot to take a picture though :)

Vegetable Quiche

Who says you can't have quiche as a vegan?

Well, not many since there are five million recipes for vegan quiche on the net, but whatever :)

I remember my mum's potato flan was a favourite, and this isn't a potato flan but it could be. I might get her recipe and give it a go. I got this recipe from Squirrel's New Vegetarian Cookbook. There used to be a restaurant (connected to the book) just up the road from my house but it apparently closed in 2006, which I am sad to discover. This 'Corn and Vegetable Flan' on page 60 of the book is the best one I've tried so far. It's definitely the closest in flavour and texture to a 'real' quiche thing made with eggs. Since I followed the recipe pretty much exactly I'd better not post the recipe :( However the ingredients are as follows: wholemeal shortcrust pastry, tofu, vegetable oil, soy sauce, onion, tomatoes (for top), 1 grated carrot and grated zucchini, frozen corn kernels. I also put in some garlic because I have trouble cooking without it!

This made a flan in a 9inch tart pan (or whatever is quite small – I couldn't find a ruler! Guessed) and served 4 (and could have served 6 if I cut the slices smaller and served potatoes or something on the side. It cost about $2.20 per serve (4) not including the side salad, which I took home after a barbecue at my dad's house.

It held together beautifully, and tasted even better the next day cold! The pastry was pretty fantastic too. I could get used to shortcrust pastry in my pies and tarts and things. I usually buy supermarket puff pastry because it well, puffs, but the white flour really gives me a belly ache. Perhaps this week I'll try a full pie with this pastry. (It's just your basic wholemeal shortcrust recipe – plain flour, salt, vegan margarine and water. I rolled it out between two sheets of baking paper because I accidentally made it too wet, but it worked fine.) Yum. Very good for summer dinners, lunches, breakfasts...:)

Monster Salad and cake

I don't tend to like salads very much. I love potato salad and pasta salads though, nice big bowls of carby goodness! When I go out to a restaurant for dinner, I usually assume that a salad will be the only vegan option - usually even salads aren't a vegan option, they are either covered in eggy milky mayonaise, creamy dressings, cheese, or pieces of decomposing cows, chickens, pigs and or ducks! Who puts meat in a freaking salad? Don't even get me started on the other vegetarian options so loaded with cheese you'll have a heart attack just looking at it...!

ANYWAY, today I was planting some beetroot seeds in the garden (I planted some a few weeks ago just before the rains came so I think they rotted before they sprouted) and I noticed 1 radish was ready to be eaten, and that I had millions more butter beans since yesterday! So I harvested it all and wanted to eat it. There's no better way to eat freshly picked radishes and beans than raw, so I decided to make it into a salad.

And damn was it GOOD!

The massive bowl full includes: kale, a large handful of butter beans, 1 sliced spring onion, 1 cob of fresh corn stripped of it's kernels (best way to eat corn!), the 1 tiny radish, 1 tomato, the leaves of the radish, 1 tbsp avocado oil, 2 tsp balsamic vinegar and a drizzle of extra virgin olive oil, and some black pepper.

Argh I just remembered I was going to put some fresh parsley and basil leaves in it too but I forgot. It was still delicious without them though! The avocado oil and corn mix really well.

I was struggling to finish it by the end, but I managed :)

Since it'll be summer soon, I'm going to try and eat raw at least once a week, or every lunch or something like that. There's nothing quite as refreshing (except perhaps a mojito in Spain) and if I keep getting beans, this type of salad will come up often :)

Yesterday I had a bit of an accident while riding to tafe on my bike! I thought I would make it over this tiny little gutter (actually I knew I wouldn't make it but went anyway) and I hit it at the wrong angle and completely stacked it on the concrete! I've ended up with a twisted wrist, bruised shoulder bones, bleeding knee and bruised swollen ankle. What a freakin pain the the ass!

I still made it to school and all the way home on my bike though which is good. Apart from the falling, it felt really good to ride all the way. I've been trying to ride to school a few times lately, but it's mostly failed. The first time I tried I nearly fainted and died (time of month = very low iron levels), the next time I got too hot and ended up with a little bit of heat stroke...so on and so forth. But this time I just kept going! (There's a huge big hill, but once you get over it it's all downhill from there!) So falling and hurting myself has ruined my endeavour to ride to school every day this week. I'll have to start again next Tuesday. Argh!

SO I decided to stay home from school today (I think driving would hurt my shoulder) and I baked myself a big ass banana cake.

I have used this recipe maybe 4 or 5 times now and it's still amazingly good. Everyone I've served it to loves it. I don't even like cake! Or bananas! I found it somewhere on the internet. It's a pretty basic recipe that I have tweaked a tiny bit.

Vegan Banana Cake
Serves 8 (or 2 pigs like us!)

Ingredients

2 cups whole meal flour
1 1/2 teaspoons of baking soda
1/2 teaspoon salt
1 cup raw sugar (this time I used about 1/2 cup raw vanilla sugar* and filled the rest up with dextrose**)
1/3 cup unrefined coconut oil (this is the type that tastes like coconut)
3 ripe bananas
1/4 cup water
1 teaspoon vanilla essense

Method

In one bowl, stir together the flour, salt and baking soda.

In another bowl, whisk or beat the sugar and oil together. Mash in the bananas and add the water and vanilla. Stir well.

Plonk the dry ingredients into the wet ones and stir until combined. (Mixture may be quite thick - every time I've made this I've used a different type of oil. This one is the best so far.) Pour into a lightly greased springform cake pan and bake for 45 minutes, or until a toothpick comes out clean, in an oven at 180 degrees C.

Let cool for minute and serve!

Sometimes I make up a 'cream cheese' icing using tofutti better than cream cheese, or simply sprinkle icing sugar (powdered sugar) on top. It doesn't need any topping at all unless you feel like it :) The cream cheese one is the nicest, though, but my local supermarket stopped carrying tofutti, which is probabaly a good thing...

*When I buy vanilla beans to use the seeds I just put the pods in a jar of sugar. It will taste of vanilla almost instantly!
**I'm trying to use up the last of my dextrose because I want to use real sugar again...or stevia or something. Dextrose is a bit too processed for my liking. I'll have to research it a bit more I think!

I had this a little while after my monster salad with a cup of freshly brewed Italian plunger coffee with a glob of So Good Vanilla Bliss ice cream in it :) I'm not a big coffee drinker, but I like it with cakes and muffins and cookies etc. I also usually drink it black with no sugar but my lovely Nadine bought me the ice cream last night when I was in my invalid state :) Aawww <3

Fruit of the month!

I always like to try a new fruit or vegetable every now and then, and now that I work at a fruit shop with a pretty good variety of exotics, I can just pick something up!

This one is called a Wax Jambu (or jambo as the sign at work spelled it ;)) and it is the fruit of a species of Lilly Pilly (Syzigium samarangense). This website has a little bit of information about it.

I have eaten other types of lilly pilly fruit in the past, and liked them, so I just had to buy these and try :) (For some reason the first search that came up was a vegan website lol).

The wax jambu is like eating a star fruit (or carambola) but without the acid. It's freakin delicious, and today if I get to work early I'm going to buy more. One for every day of the week!

The neighbours have lined their fence with small-leaved lilly pillys (second link) and they just went into flower, which means - fruit! Their trees happen to be dropping over MY fence therefore they are up for grabs. Unfortunately, I think the possums have gotten to the blossoms...they have stripped the other neighbours avocado tree of it's flowers, and the other neighbours mango tree of it's flowers (me = very sad) so it wouldn't surprise me if the lilly pilly flowers are gone too.

So worth the $8.99/kg price ticket. It's not that expensive - they barely weigh anything.

I knwo of a few quandong trees in a public space that I may be able to get fruit off, too...at least I'm sure I can gather the fruits that have fallen to the ground. Muaha.


I had this randomly delicious meal for lunch today. I wasn't expecting it to taste so good :) It's basically brown rice, Fry's Chicken Nuggets, and sautee'd kale, beetroot stems, sliced ginger and garlic with vegan butter and a blob of vegan tom yum soup paste. I drizzled soy sauce over the top, but may have put too much because it was a bit salty...I even managed to get in a bit of weights work while I was waiting for the rice to cook! Not much, but it was something. I've been quite slack lately. Usually only managing a couple of sun salutes in the mornings, which is better than nothing I suppose.
